What are saxophone reeds made of?

Saxophone reeds are made of cane, which is a plant with a hollow stem. The cane wood is cut and shaved precisely to make the reed.

 

What strength reed is good for beginner saxophone?

Most beginners will find it easier to play a thinner reed, since thinner reeds are easier to make vibrate. So a 2.0 or 2.5 strength reed should work well for beginners.
